Kadambari Butterfly Pea Flower Tea (Blue Tea)

Kadambari Butterfly Pea Flower Tea, often called blue tea, is made from whole dried butterfly pea flowers (Clitoria ternatea). In India the same flower is known as aparajita, shankupushpam or sangu poo. Steep a spoonful in hot water and it turns a deep indigo blue. Add a squeeze of lemon and it changes to violet in seconds.

It is naturally caffeine free, with no added colour, flavour or sugar. Just the flower and hot water.

What does blue tea taste like?

Mild and earthy, closer to a light green tea than a perfume-like floral tea. It goes well with a spoon of raw forest honey and a little lemon.

How to make butterfly pea flower tea

1. Add one teaspoon of dried flowers to a cup.
2. Pour over 200 to 250 ml of hot water, just off the boil.
3. Steep for 5 to 10 minutes, then strain.
4. Add honey or lemon if you like. Lemon turns the tea from blue to violet.

Iced blue tea and mocktails

Brew it double strength, let it cool and pour over ice. Layer it over lemonade or tonic for a drink that changes colour as you stir.

Why is it blue?

Butterfly pea flowers are naturally rich in anthocyanins, the plant pigments that give the tea its colour. Those pigments react to acid, which is why lemon turns the cup purple.
